India is bursting with different languages and cultures, each with its own distinct heritage. We are influenced by a North Indian style of cooking native to the Punjab. The Punjab is a culture with a rich history of welcoming Alexander to the long-lasting kingdom of Maharaja Ranjit Singh.
The Tandoor
The Tandoor is a cylindrical clay oven which envelops with heat that evenly cooks meat,
chicken, shrimp, and breads to a very hearty flavor. The Tandoor is used for cooking in
places from Azerbaijan, Turkey, Armenia, Georgia, to the Middle East, Central Asia ,
and of course, India. The chicken and shrimp entrees are seasoned and marinated in yogurt, garlic, ginger, cumin and coriander powder. Our lamb is seasoned in lemon juice and garlic, ginger, cumin and a coriander powder marinade.
